Slowcooker Oxtail and Onion Soup

Ingredients
  

  • 2 lbs oxtail
  • 4 cups onions sliced
  • 8 cups beef broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • In a large skillet, heat olive oil over medium-high heat. Sear oxtail on all sides until browned.
  • Transfer oxtail to a slow cooker. Add sliced onions and beef broth.
  • Season with salt and pepper.
  • Cover and cook on low for 7 hours or on high for 3-4 hours, or until oxtail is tender.
