Smoky Black Bean Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 15-ounce cans black beans rinsed and drained
  • 1/4 cup fresh cilantro chopped, plus more for garnish
  • 1 tablespoon lime juice
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, cumin, and smoked paprika and cook for 1 minute more.
  • Add vegetable broth and black beans to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Remove from heat and stir in cilantro and lime juice. Season with salt and pepper to taste.
  • Serve hot, garnished with additional cilantro.
