Sopa de Quinoa

Ingredients
  

  • 1 cup Quinoa
  • 4 cups Water
  • 1 onion Onion, chopped
  • 2 carrots Carrots, chopped
  • 2 celery stalks Celery stalks, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Fresh cilantro or celery leaves For garnish

Instructions
 

  • Rinse the quinoa in a fine-mesh sieve.
  • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add the quinoa and water to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked through.
  • Season with salt and pepper.
  • Serve hot, garnished with fresh cilantro or celery leaves.
