Instructions
Rinse the quinoa in a fine-mesh sieve.
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
Add the quinoa and water to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked through.
Season with salt and pepper.
Serve hot, garnished with fresh cilantro or celery leaves.
