Ingredients
  

  • 1 each cucumber halved and seeded
  • 2 each red bell peppers cored and seeded
  • 4 each plum tomatoes
  • 1 each onion
  • 2 cloves garlic minced
  • 12 ounces tomato juice 3 cups
  • 1/4 cup white wine vinegar
  • 1/4 cup olive oil
  • 1/2 tbsp kosher salt
  • 1/2 tsp black pepper

Instructions
 

  • Process all of the veggies in your food processor.
  • Add all of the other ingredients.
  • Pour it into a bowl, stir, and chill.
