Spiced Carrot Apple Ginger Soup

Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 10 each carrots, peeled and chopped in thirds
  • 2 each apples, peeled and cored, cut in wedges
  • 3 cloves garlic, peeled and halved
  • 1 tbsp cumin seeds
  • 3 tbsp fresh ginger, peeled and cut in small pieces
  • 1 tsp smoked paprika
  • 1 tsp coriander
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste salt and pepper
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add cumin seeds and cook for 1 minute, until fragrant.
  • Add carrots, apples, and garlic to the pot and cook for 5-7 minutes, until slightly softened.
  • Add vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until carrots are tender.
  • Use an immersion blender to puree the soup until smooth. Alternatively, you may use a blender, just be careful since the soup is hot!
  • Stir in coconut milk, coriander, salt, and pepper. Heat through.
  • Finish the soup with a squeeze of lime juice and fresh cilantro.
