carrots, peeled and chopped in thirds

apples, peeled and cored, cut in wedges

cloves
garlic, peeled and halved

cumin seeds

fresh ginger, peeled and cut in small pieces

smoked paprika

coriander

vegetable broth

coconut milk
to taste
salt and pepper

lime juice

fresh cilantro, chopped
Instructions
Heat olive oil in a large pot over medium heat. Add cumin seeds and cook for 1 minute, until fragrant.
Add carrots, apples, and garlic to the pot and cook for 5-7 minutes, until slightly softened.
Add vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until carrots are tender.
Use an immersion blender to puree the soup until smooth. Alternatively, you may use a blender, just be careful since the soup is hot!
Stir in coconut milk, coriander, salt, and pepper. Heat through.
Finish the soup with a squeeze of lime juice and fresh cilantro.
