Spiced Pear & Pumpkin Soup

Ingredients
  

  • 6 cups Pumpkin puree
  • 2 medium Pears such as Anjou or Bosc
  • 1 medium Onion chopped
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground ginger
  • 1/2 teaspoon Ground cinnamon
  • 4 cups Vegetable broth
  • 1 sprig Fresh thyme
  • To taste Salt and pepper
  • 1/2 cup Cranberries dried or fresh
  • 1/2 cup Pumpkin seeds roasted

Instructions
 

  • Sauté onion in olive oil until softened.
  • Add pumpkin puree, ginger, and cinnamon. Cook for 5 minutes.
  • Pour in vegetable broth and add thyme sprig. Bring to a simmer and cook for 20 minutes.
  • Remove thyme sprig. Puree the soup with a blender or immersion blender until smooth.
  • Stir in diced pears. Season with salt and pepper to taste.
  • Serve topped with cranberries and pumpkin seeds.
