Instructions
Bring chicken broth to a boil in a large pot.
Add noodles and cook according to package directions.
Add cooked chicken, leeks, and beet tops (if using).
Stir in chili flakes, fresh thyme, star anise, cinnamon, mace, nutmeg, and ginger (if using).
Simmer for 10-15 minutes to allow flavors to meld.
Stir in lime juice just before serving.
