Ingredients
  

  • 8 cups Chicken Broth Use leftover bones for a richer stock!
  • 1 cup Egg Noodles
  • 1 cup Cooked Chicken Shredded or diced
  • 1/2 cup Leeks Sliced, or use other leftover veggies
  • 1/4 cup Beet Tops Optional, for a pink hue
  • 1 tsp Chili Flakes Or Sriracha/Rooster Sauce to taste
  • 1 sprig Fresh Thyme Or rosemary, basil, oregano
  • 1/2 tsp Star Anise Optional
  • 1/4 tsp Cinnamon Optional
  • Pinch Mace Optional
  • Pinch Nutmeg Optional
  • 1/2 tsp Dried Ginger Optional
  • 1 tbsp Lime Juice Or Lemon Juice

Instructions
 

  • Bring chicken broth to a boil in a large pot.
  • Add noodles and cook according to package directions.
  • Add cooked chicken, leeks, and beet tops (if using).
  • Stir in chili flakes, fresh thyme, star anise, cinnamon, mace, nutmeg, and ginger (if using).
  • Simmer for 10-15 minutes to allow flavors to meld.
  • Stir in lime juice just before serving.
