Spicy Corn and Tomato Gazpacho

Ingredients
  

  • 6 cups fresh or canned diced tomatoes
  • 1 cup corn kernels fresh or frozen
  • 1/2 cup red onion chopped
  • 1/4 cup red bell pepper chopped
  • 1-2 jalapeƱos seeded and minced (adjust to taste)
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • salt to taste
  • black pepper to taste

Instructions
 

  • Combine all ingredients in a blender or food processor.
  • Blend until smooth or desired consistency is reached.
  • Taste and adjust seasonings as needed.
  • Chill for at least 30 minutes before serving.
  • Garnish with fresh cilantro or a drizzle of olive oil, if desired.
