Spicy Fish Soup

Ingredients
  

  • 1 lb white fish fillets (cod, tilapia, or halibut) cut into chunks
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups fish or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 medium bell pepper sliced
  • 1 medium carrot sliced
  • 1/2 cup fresh cilantro chopped
  • 1 tablespoon lemon juice
  • optional red pepper flakes for extra heat

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until fragrant (about 3 minutes).
  • Add diced tomatoes, broth, paprika, cayenne, oregano, cumin, salt, and black pepper. Stir and bring to a simmer.
  • Stir in sliced bell pepper and carrots. Simmer for about 10 minutes until vegetables start to soften.
  • Gently place the fish fillets into the broth. Reduce heat to low and simmer for 8-10 minutes until the fish is tender and flaky.
  • Stir in lemon juice and chopped cilantro, then remove from heat. Serve hot, garnished with extra cilantro and red pepper flakes if desired.
