Spicy Sour Shrimp Soup

Ingredients
  

  • 1 lb Shrimp, peeled and deveined
  • 4 cups Chicken broth
  • 1 cup Tomatoes, chopped
  • 1/2 cup Onion, chopped
  • 2 tbsp Lime juice
  • 1 tbsp Fish sauce
  • 1 tsp Red pepper flakes Adjust to taste
  • 1/2 cup Mushrooms, sliced
  • 2 tbsp Vegetable oil
  • 1/4 cup Green onions, chopped For garnish
  • 1/4 cup Cilantro, chopped For garnish

Instructions
 

  • Heat vegetable oil in a large pot or Dutch oven over medium heat.
  • Add onion and mushrooms and cook until softened, about 5 minutes.
  • Add chicken broth and tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add shrimp and cook until pink and opaque, about 3-5 minutes.
  • Stir in lime juice, fish sauce, and red pepper flakes. Taste and adjust seasonings as needed.
  • Garnish with green onions and cilantro before serving.
