Instructions
Heat vegetable oil in a large pot or Dutch oven over medium heat.
Add onion and mushrooms and cook until softened, about 5 minutes.
Add chicken broth and tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add shrimp and cook until pink and opaque, about 3-5 minutes.
Stir in lime juice, fish sauce, and red pepper flakes. Taste and adjust seasonings as needed.
Garnish with green onions and cilantro before serving.
