Spicy Tomato Basil Soup

Ingredients
  

  • 2 lbs plum tomatoes sliced in half
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 5-6 cloves garlic minced
  • 1 jalapeño minced
  • 2 cups basil tightly packed
  • 1/4 cup sun-dried tomatoes
  • 2 cups veg stock or water
  • 1 14 oz can crushed plum tomatoes
  • 1/2 tsp chili powder
  • 1 tsp garam masala
  • to taste salt
  • to taste pepper

Instructions
 

  • Roast the plum tomatoes with olive oil, salt and pepper at 400 F for about 30-40 minutes.
  • Sauté the onion and garlic in a pot until softened.
  • Add the roasted tomatoes, basil, sun-dried tomatoes, veg stock, chili powder, and garam masala to the pot.
  • Bring to a simmer and cook for 15 minutes.
  • Blend the soup until smooth.
  • Season with salt and pepper to taste.
