Spinach in Coconut Milk (Laing)

Ingredients
  

  • 1/2 lb Pork
  • 1 lb Spinach
  • 1 thumb-sized Ginger Peeled and minced
  • 2-3 cloves Garlic Minced
  • 1/2 can Coconut Milk
  • 1 small Thai pepper Use sparingly, wash hands after handling

Instructions
 

  • Sauté garlic and ginger until fragrant.
  • Add pork and cook until browned.
  • Add coconut milk and Thai pepper. Bring to a simmer.
  • Mix in the spinach when the pork is fork tender.
  • Cook until the spinach leaves have wilted.
