Spinach Matzo Ball Minestrone Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup carrots julienned
  • 1 cup zucchini julienned
  • 8 cups vegetable broth
  • 1 cup canned diced tomatoes
  • 1 cup spinach
  • 1/2 cup small pasta
  • 1 package Lipton Kosher Matzo Ball Mix
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add carrots and zucchini and cook for another 5 minutes.
  • Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Prepare matzo ball mix according to package directions.
  • Add spinach and pasta to the soup. Simmer for 5 minutes.
  • With wet hands, form matzo ball batter into small balls and gently drop into the simmering soup.
  • Simmer for another 15 minutes, or until matzo balls are cooked through.
  • Season with salt and pepper to taste.
