Lipton Kosher Matzo Ball Mix

Instructions
Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add carrots and zucchini and cook for another 5 minutes.
Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
Prepare matzo ball mix according to package directions.
Add spinach and pasta to the soup. Simmer for 5 minutes.
With wet hands, form matzo ball batter into small balls and gently drop into the simmering soup.
Simmer for another 15 minutes, or until matzo balls are cooked through.
Season with salt and pepper to taste.
