Split Pea Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 cup dried split peas
  • 8 cups chicken broth
  • 1 ham bone smoked ham bone
  • 2 bay leaves bay leaves
  • salt to taste salt
  • pepper to taste pepper
  • optional to taste croutons

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add onion, carrots, and celery and sauté until tender, about 5-7 minutes. Add garlic and Italian seasoning and cook for another minute.
  • Add split peas, chicken broth, ham bone, and bay leaves to the pot. Bring to a simmer, then reduce heat and cook for 45-55 minutes, or until split peas are tender and the soup has thickened.
  • Remove ham bone and bay leaves. Shred any meat from the bone and return it to the soup.
  • Season with salt and pepper to taste. Serve warm, topped with croutons if desired.
