Stuffed Pepper Soup

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 28 oz crushed tomatoes
  • 1 15 oz tomato sauce
  • 1 15 oz diced tomatoes, undrained
  • 1 cup beef broth
  • 1 cup cooked rice
  • 1 cup frozen bell peppers
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a large pot or Dutch oven, brown the ground beef over medium heat. Drain off any excess grease.
  • Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the crushed tomatoes, tomato sauce, diced tomatoes, beef broth, cooked rice, and frozen bell peppers.
  • Season with Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for at least 30 minutes, or up to an hour, to allow the flavors to meld.
  • Serve hot and enjoy!
