Ingredients
  

  • 2 medium cucumbers or 4 persian cucumbers
  • 3 cups plain whole fat yogurt
  • 1.5 cups water
  • 1 small melon peeled and cubed
  • 1 inch ginger
  • 1 tsp fennel seeds
  • 4 seeds anise seeds
  • 1/4 cup cashews
  • 5 medium tomatoes
  • 1 tsp salt

Instructions
 

  • Prepare each soup individually according to the ingredient list and instructions below.
  • Moroccan Yogurt Cucumber Soup: Blend cucumbers, yogurt, and water until smooth. Season with salt. Chill for 30 minutes.
  • Melon Ginger and Fennel Soup: Place melon, ginger, fennel seeds, anise seeds, and cashews in a blender. Blend until smooth. Chill for 30 minutes.
  • Tomato Soup: Blend tomatoes and salt until smooth. Chill for 30 minutes.
