Sweet Corn Gazpacho

Ingredients
  

  • 2 cups fresh corn kernels about 4 ears’ worth, plus extra for garnish
  • 1 large yellow bell pepper stemmed, seeded, and chopped
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp sherry vinegar
  • 3-5 ice cubes
  • 2 Tbsp chopped chives
  • 1/2 cup cantaloupe diced (secret ingredient!)
  • to taste Kosher salt and freshly ground black pepper

Instructions
 

  • Combine corn kernels, yellow bell pepper, olive oil, sherry vinegar, and cantaloupe in a blender.
  • Add ice cubes and blend until smooth.
  • Season with salt and pepper to taste.
  • Garnish with extra corn kernels and chopped chives.
