Sweet Pepper & Asparagus Black Bean Soup

Ingredients
  

  • 1 package Chipotle Lime Black Bean Soup
  • 1/2 cup Green Bell Pepper diced
  • 1/2 cup Red Bell Pepper diced
  • 1/2 lb Asparagus diced
  • 1 cup Onion diced
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add green and red bell peppers and asparagus and cook until slightly tender, about 5 minutes.
  • Add the black bean soup mix and 6 cups of water. Bring to a boil, then reduce heat and simmer for 60 minutes, stirring occasionally.
  • Season with salt and pepper to taste.
