Sweet Potato & Cauliflower Soup

Ingredients
  

  • 3 cups cauliflower chopped into small pieces
  • 1 medium sweet potato grated
  • 2 stocks celery diced
  • 1 small onion diced
  • 1 cup cherry tomatoes sliced
  • 2 cloves garlic minced
  • 3 Tbsp oil or butter
  • 750 ml low sodium chicken or vegetable broth
  • ¾ cup half-and-half cream
  • 1 tsp thyme
  • ½ tsp paprika
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions
 

  • Combine all ingredients in a large pot.
  • Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
  • Blend with an immersion blender or in a regular blender until smooth.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley and serve.
