Ingredients

cauliflower
chopped into small pieces

sweet potato
grated

stocks
celery
diced

onion
diced

cherry tomatoes
sliced

cloves
garlic
minced

oil or butter

ml
low sodium chicken or vegetable broth
¾
cup
half-and-half cream

tsp
thyme

tsp
paprika
to taste
salt and pepper
for garnish
fresh parsley
Instructions
Combine all ingredients in a large pot.
Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
Blend with an immersion blender or in a regular blender until smooth.
Season with salt and pepper to taste.
Garnish with fresh parsley and serve.
