Sweet Potato & Kale Soup

Ingredients
  

  • 4 lbs Sweet Potatoes Look for truly sweet ones, if possible.
  • 1 bunch Kale Any variety will work.
  • 8 cups Vegetable Broth
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for another minute until fragrant.
  • Peel and chop sweet potatoes. Add to the pot along with vegetable broth, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until sweet potatoes are tender.
  • Add kale and cook until wilted, about 5-10 minutes.
  • Use an immersion blender or transfer to a regular blender to blend until smooth. (Be careful when blending hot liquids!)
  • Adjust seasoning to taste.
