Sweet Potatoes
Look for truly sweet ones, if possible.

Kale
Any variety will work.

Vegetable Broth

Onion
Diced

Garlic

Olive Oil

Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for another minute until fragrant.
Peel and chop sweet potatoes. Add to the pot along with vegetable broth, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until sweet potatoes are tender.
Add kale and cook until wilted, about 5-10 minutes.
Use an immersion blender or transfer to a regular blender to blend until smooth. (Be careful when blending hot liquids!)
Adjust seasoning to taste.
