Instructions
In a large pot, combine vegetable broth, coconut milk, red curry paste, fish sauce, lime juice, sugar, ginger, and garlic. Bring to a boil.
Add mushrooms, bell peppers, and carrots. Reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
Garnish with chopped cilantro before serving.
