Thai Coconut Soup

Ingredients
  

  • 4 cups vegetable broth
  • 1 can coconut milk full-fat recommended
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 1/2 cup sliced carrots
  • 1/4 cup chopped cilantro for garnish
  • 1 tablespoon sugar
  • 1 inch ginger grated
  • 2 cloves garlic minced

Instructions
 

  • In a large pot, combine vegetable broth, coconut milk, red curry paste, fish sauce, lime juice, sugar, ginger, and garlic. Bring to a boil.
  • Add mushrooms, bell peppers, and carrots. Reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  • Garnish with chopped cilantro before serving.
