Thai Noodle and Vegetable Soup

Ingredients
  

  • 8 oz Rice Noodles
  • 4 cups Vegetable Broth
  • 1 cup Sliced Mushrooms
  • 1 cup Sliced Carrots
  • 1/2 cup Sliced Bell Pepper
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 teaspoon Ginger, grated
  • 1/2 teaspoon Red Pepper Flakes

Instructions
 

  • Cook rice noodles according to package directions. Drain and set aside.
  • In a large pot, bring vegetable broth to a boil.
  • Add mushrooms, carrots, and bell pepper to the boiling broth. Cook until tender-crisp.
  • Stir in soy sauce, lime juice, ginger, and red pepper flakes.
  • Add cooked noodles to the broth and heat through.
  • Serve immediately.
