Instructions
Cook rice noodles according to package directions. Drain and set aside.
In a large pot, bring vegetable broth to a boil.
Add mushrooms, carrots, and bell pepper to the boiling broth. Cook until tender-crisp.
Stir in soy sauce, lime juice, ginger, and red pepper flakes.
Add cooked noodles to the broth and heat through.
Serve immediately.
