Toad in the Hole

Ingredients
  

  • 1 lb sausages
  • 175 g plain flour
  • pinch salt
  • 2 eggs
  • 450 ml milk
  • 4 tbs oil or butter

Instructions
 

  • Sift the flour and salt into a bowl. Make a well in the middle and add the eggs and milk. Beat together to create a smooth batter. Leave the batter to stand for at least thirty minutes.
  • Preheat the oven to Gas 7/220C/425F. Put the oil into a baking dish and place in the oven for 3-5 minutes.
  • Add the sausages to the hot oil and cook for 10-15 minutes until they are starting to brown.
  • Give the batter mix another quick whisk to get rid of any lumps that may have formed.
  • Pour the batter over the sausages and into the hot oil. (Note that you want the oil to be very hot in order for the batter to rise).
  • Bake for 40-45 minutes, until the sausages are cooked and the batter has risen and is golden. Serve hot with gravy.
