Sift the flour and salt into a bowl. Make a well in the middle and add the eggs and milk. Beat together to create a smooth batter. Leave the batter to stand for at least thirty minutes.
Preheat the oven to Gas 7/220C/425F. Put the oil into a baking dish and place in the oven for 3-5 minutes.
Add the sausages to the hot oil and cook for 10-15 minutes until they are starting to brown.
Give the batter mix another quick whisk to get rid of any lumps that may have formed.
Pour the batter over the sausages and into the hot oil. (Note that you want the oil to be very hot in order for the batter to rise).
Bake for 40-45 minutes, until the sausages are cooked and the batter has risen and is golden. Serve hot with gravy.
