Ingredients
  

  • 4 cups Chicken or vegetable broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 1 inch Galangal, sliced
  • 2 stalks Lemongrass, bruised
  • 4 Kaffir lime leaves Kaffir lime leaves
  • 8 oz Shrimp, peeled and deveined
  • 1/2 cup Mushrooms, sliced
  • 1/4 cup Cherry tomatoes, halved
  • 2 tablespoons Cilantro, chopped For garnish
  • 1 red chili Red chili Sliced, adjust to taste

Instructions
 

  • Bring the broth to a boil in a large pot.
  • Add fish sauce, lime juice, and sugar. Stir to combine.
  • Add galangal, lemongrass, and kaffir lime leaves. Simmer for 10 minutes.
  • Add shrimp and mushrooms. Cook until shrimp turns pink, about 2-3 minutes.
  • Add cherry tomatoes and cook for another minute.
  • Remove from heat and garnish with cilantro and sliced red chili.
