Instructions
Grill or broil tomatillos, onion, and poblano pepper until slightly charred.
Combine all ingredients in a blender and blend until smooth.
Chill for at least 30 minutes before serving.
Garnish with olive oil, cilantro, and roasted pepitas (optional).
