Tomato Egg Drop Soup

Ingredients
  

  • 4 cups Chicken or vegetable broth
  • 1 tablespoon Soy sauce Optional
  • 1 teaspoon Sugar Optional
  • 2 large Eggs
  • 1 tablespoon Cornstarch
  • 1 tablespoon Water
  • 1 stalk Green onion Chopped, for garnish
  • 1/4 teaspoon Black pepper For garnish

Instructions
 

  • In a medium saucepan, bring the broth to a boil.
  • In a small bowl, whisk together the eggs and cornstarch until smooth.
  • Slowly drizzle the egg mixture into the boiling broth while stirring constantly with a fork or chopsticks. Continue stirring until the eggs are cooked and form ribbons.
  • Season with soy sauce and sugar, if desired.
  • Garnish with chopped green onions and black pepper. Serve immediately.
