Tomato Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 28 ounces crushed tomatoes
  • 2 tablespoons white rice flour
  • 3.5 cups vegetable broth
  • 1-2 teaspoons honey
  • to taste salt and pepper
  • fresh basil for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
  • Add crushed tomatoes and rice flour to the pot. Stir well to combine.
  • Pour in vegetable broth and bring to a simmer, stirring constantly. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  • Stir in honey, salt, and pepper to taste. Adjust seasonings as needed.
  • Garnish with fresh basil and serve.
