Tortellini Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 8 cups chicken broth
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 9 oz cheese tortellini
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Pour in chicken broth and diced tomatoes. Stir in oregano and basil. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add tortellini and cook according to package directions.
  • Stir in heavy cream and Parmesan cheese. Heat through.
  • Garnish with fresh parsley and serve immediately.
