Turkey and Quinoa Bowl

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water or broth
  • 1 cup cooked shredded turkey
  • 1 cup mixed vegetables carrots, bell peppers, and spinach
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp fresh herbs optional

Instructions
 

  • Rinse quinoa under cold water.
  • In a pot, bring water or broth to a boil.
  • Add quinoa, cover, and simmer for about 15 minutes.
  • In a skillet, heat olive oil and sauté vegetables until tender.
  • Stir in the shredded turkey and heat through.
  • Mix quinoa with turkey and veggies in a bowl.
  • Season with salt, pepper, and herbs.
  • Enjoy!
