Turkey and Spinach Rice Bowl with Marinated Radishes

Ingredients
  

  • 1 cup brown rice or Basmati
  • 2 cups water for cooking rice
  • 1 bunch radishes
  • 1 each lemon
  • 1 pound ground turkey
  • 3 cloves garlic
  • 1 bunch raw spinach
  • 1 bunch cilantro
  • 2-3 cups water for cooking spinach and turkey

Instructions
 

  • Cook or steam rice using package directions (1 part rice to 2 parts water).
  • Slice radishes and marinate in the juice of one whole lemon.
  • Sauté turkey with garlic, then set aside.
  • Fill a pot with 2-3 cups water, chopped spinach, and chopped cilantro. Cook for five minutes; then add turkey and garlic and cook another 20 minutes.
  • When you serve, add a couple spoonfuls of cooked rice and marinated radishes.
