Turkey and White Bean Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 28 ounce can crushed tomatoes
  • 1 15 ounce can white beans, rinsed and drained
  • 1 cup chicken broth
  • 1/2 cup corn kernels
  • 1/4 cup chopped cilantro For garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add ground turkey and cook, breaking it up with a spoon, until browned.
  • Stir in chili powder, cumin, and smoked paprika.
  • Add crushed tomatoes, white beans, and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  • Stir in corn kernels and cook for 5 minutes more.
  • Serve garnished with chopped cilantro.
