Turkey Pot Pie Soup

Ingredients
  

  • 4 tablespoons butter
  • 1 cup onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups cooked turkey, shredded
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Melt butter in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Stir in flour and cook for 1 minute.
  • Gradually whisk in chicken broth and milk until smooth.
  • Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
  • Stir in turkey, peas, and corn. Season with salt and pepper to taste.
  • Simmer for another 10 minutes.
  • Serve hot with oyster crackers.
