Turkey Rice Soup

Ingredients
  

  • 2 cups Cooked Turkey
  • 1 tablespoon Olive Oil
  • 0.5 teaspoon Black Pepper
  • 8-12 cups Chicken Stock Adjust salt based on stock sodium content
  • 0.5 cup Parboiled Long Grain Brown Rice
  • 1 large Carrot Cubed
  • 2 stalks Scallions Chopped
  • 4 sprigs Thyme
  • 1-2 tablespoons Parsley Chopped
  • 1 large Onion
  • 2 stalks Celery Diced
  • 1 each Bird's Eye Pepper Optional
  • 0.5 teaspoon Salt
  • 1-2 cups Baby Spinach Optional

Instructions
 

  • Heat olive oil in a soup pot over medium heat.
  • Add onion, celery, carrot, thyme, black pepper, salt, and bird's eye pepper (if using) and scallions to the pot.
  • Reduce heat to low and cook for 4-5 minutes.
  • Add diced turkey to the pot.
  • Pour in chicken stock and bring to a simmer.
  • Add rice and cook until tender, about 20 minutes.
  • Stir in baby spinach (if using) during the last few minutes of cooking.
  • Serve hot.
