Instructions
Heat olive oil in a soup pot over medium heat.
Add onion, celery, carrot, thyme, black pepper, salt, and bird's eye pepper (if using) and scallions to the pot.
Reduce heat to low and cook for 4-5 minutes.
Add diced turkey to the pot.
Pour in chicken stock and bring to a simmer.
Add rice and cook until tender, about 20 minutes.
Stir in baby spinach (if using) during the last few minutes of cooking.
Serve hot.
