Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
Pour in turkey stock and bring to a boil. Reduce heat and simmer for 15 minutes.
Add cooked turkey, rice or pasta (if using), thyme, salt, and pepper. Simmer for another 5-10 minutes, or until heated through.
Serve hot.
