Turkey Stock Soup

Ingredients
  

  • 1 cup Turkey Stock Homemade or store-bought
  • 1 tablespoon Olive Oil
  • 1 cup Diced Onion
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Cooked Turkey Shredded or diced
  • 1/2 cup Rice or Pasta Optional
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Pour in turkey stock and bring to a boil. Reduce heat and simmer for 15 minutes.
  • Add cooked turkey, rice or pasta (if using), thyme, salt, and pepper. Simmer for another 5-10 minutes, or until heated through.
  • Serve hot.
