Turkey Taco Soup

Ingredients
  

  • 1 lb Extra Lean ground turkey breast
  • 1 onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1 oz homemade taco seasoning or 1 packet
  • 1 oz Hidden Valley Ranch dip packet
  • 10 oz frozen corn
  • 15 oz kidney beans drained and rinsed
  • 15 oz pinto beans drained and rinsed
  • 15 oz fire roasted diced tomatoes and green chillies
  • 32 oz chicken broth
  • 1 cup water
  • 1/2 cup fresh cilantro roughly chopped

Instructions
 

  • Spray a large soup pot with non-stick spray and heat over medium high heat. Add turkey, garlic, onion and bell pepper. Cook for 8-10 minutes stirring occasionally until turkey is cooked through.
  • Stir in taco seasoning and ranch. Add corn, beans, tomatoes, broth and water. Bring to a boil, reduce heat and simmer 20 minutes.
  • Remove from heat, stir in cilantro and serve as is or with your toppings on the side.
