Turkey Vegetable Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion onion, chopped
  • 2 carrots carrots, chopped
  • 2 celery stalks celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 3 cups cooked turkey, shredded
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • salt and pepper to taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add chicken or vegetable broth, shredded turkey, potatoes, green beans, and corn to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
  • Stir in thyme and rosemary. Season with salt and pepper to taste.
  • Serve hot.
