In a large pot or Dutch oven, combine broth, onion, carrots, celery, thyme, rosemary, and bay leaf. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
Add cooked turkey and noodles or rice to the pot. Continue to simmer until noodles or rice are cooked through.
Remove bay leaf before serving.
