Ingredients
  

  • 3 cups Cooked Turkey Shredded or diced
  • 8 cups Chicken or Turkey Broth Low sodium preferred
  • 1 cup Diced Onion
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary
  • 1 bay leaf Bay Leaf
  • 1 cup Noodles or Rice Gemelli, orzo, or your preference
  • Optional Lemon Juice For lemon soup variation
  • Optional 1/2 cup Mango, diced (for mango turkey soup)
  • Optional 1/2 cup Pumpkin Puree (for pumpkin chili)
  • Optional 1/2 cup Cream Cheese
  • Optional 1 cup Black Beans
  • Optional 1 cup Coconut Milk

Instructions
 

  • In a large pot or Dutch oven, combine broth, onion, carrots, celery, thyme, rosemary, and bay leaf. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until vegetables are tender.
  • Add cooked turkey and noodles or rice to the pot. Continue to simmer until noodles or rice are cooked through.
  • Remove bay leaf before serving.
  • For variations, add ingredients as specified in the recipe (e.g., mango, pumpkin puree, cream cheese, coconut milk).
