Vegan Broccoli Cheddar Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup unsweetened plant milk
  • 1/2 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until broccoli is tender.
  • Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  • Return the soup to the pot and stir in plant milk, nutritional yeast, lemon juice, salt, and pepper.
  • Heat through and serve immediately.
