Vegan Cauliflower Potato Soup

Ingredients
  

  • 1 head cauliflower cut into florets
  • 4 medium potatoes peeled and cubed
  • 4 cups vegetable broth
  • 1 can full-fat coconut milk 13.5 oz
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions
 

  • Add cauliflower, potatoes, and vegetable broth to a large pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until vegetables are tender.
  • Using an immersion blender, blend the soup until smooth.
  • Stir in coconut milk, salt, and pepper. Heat through.
  • Serve hot.
