Vegan Coconut Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 onion onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 can coconut milk full-fat
  • 4 cups vegetable broth
  • 1 sweet potato sweet potato peeled and cubed
  • 1 can chickpeas drained and rinsed
  • 1 cup broccoli florets
  • 1 tbsp lime juice
  • 1/4 cup cilantro chopped, for garnish
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and ginger and cook for 1 minute more.
  • Stir in cumin and paprika and cook for 30 seconds.
  • Pour in coconut milk and vegetable broth. Bring to a simmer.
  • Add sweet potato and chickpeas. Cook for 15-20 minutes, or until sweet potato is tender.
  • Add broccoli and cook for 3-4 minutes, or until bright green.
  • Stir in lime juice. Season with salt and pepper to taste.
  • Serve garnished with cilantro.
