Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger and cook for 1 minute more.
Stir in curry powder, turmeric, and cumin. Cook for 30 seconds until fragrant.
Add red lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
Stir in coconut milk and lemon juice. Season with salt and pepper to taste.
Serve hot.
