Vegan Curried Red Lentil Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/4 tsp cumin
  • 1 cup red lentils rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1/2 cup coconut milk full-fat
  • 1 tbsp lemon juice
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and ginger and cook for 1 minute more.
  • Stir in curry powder, turmeric, and cumin. Cook for 30 seconds until fragrant.
  • Add red lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Stir in coconut milk and lemon juice. Season with salt and pepper to taste.
  • Serve hot.
