Instructions
Heat olive oil in a large pot over medium heat.
Add lentils and cook for 2-3 minutes, stirring constantly.
Pour in vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender.
Stir in turmeric, ginger, garlic, coriander, cayenne pepper (if using), salt, and pepper.
Simmer for another 5 minutes to allow flavors to meld.
Serve hot.
