Vegan Curry Lentil Soup

Ingredients
  

  • 1 tablespoon olive oil
  • ½ teaspoon cumin seeds
  • 1 cup red lentils rinsed
  • 4 cups vegetable broth
  • 1 teaspoon turmeric powder
  • ½ teaspoon ginger powder
  • ½ teaspoon garlic powder
  • ½ teaspoon coriander powder
  • ¼ teaspoon cayenne pepper optional
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add lentils and cook for 2-3 minutes, stirring constantly.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender.
  • Stir in turmeric, ginger, garlic, coriander, cayenne pepper (if using), salt, and pepper.
  • Simmer for another 5 minutes to allow flavors to meld.
  • Serve hot.
