Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more.
Pour in vegetable broth and bring to a boil.
Add gnocchi and cook according to package directions.
Stir in spinach and cook until wilted.
Stir in nutritional yeast and lemon juice. Season with salt and pepper to taste.
Serve immediately.
