Vegan Gnocchi Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 pound vegan gnocchi
  • 1 cup spinach
  • 1/2 cup nutritional yeast
  • 1 tablespoon lemon juice
  • salt and pepper to taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and bring to a boil.
  • Add gnocchi and cook according to package directions.
  • Stir in spinach and cook until wilted.
  • Stir in nutritional yeast and lemon juice. Season with salt and pepper to taste.
  • Serve immediately.
