Vegan Lentil Soup

Ingredients
  

  • 1 tablespoon oil
  • 1 small onion diced (about 1 cup)
  • 4 cloves garlic minced
  • 2 10-ounce bags frozen mixed vegetables
  • 1 14-ounce can fire-roasted diced tomatoes
  • 3/4 cup lentils
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • salt to taste salt
  • pepper to taste pepper

Instructions
 

  • Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and cook for 1 minute more.
  • Add the frozen mixed vegetables, diced tomatoes, lentils, vegetable broth, thyme, and smoked paprika. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
  • Season with salt and pepper to taste.
