do not drain

organic vegetable stock

lentils
pre-soaked, if possible
Instructions
Sauté garlic, onion, carrots, and celery until softened.
Add diced tomatoes, vegetable stock, water, and lentils.
Bring to a boil, then simmer for as long as package directions suggest for the lentils, longer if potatoes need more time.
Adjust water to reach desired consistency.
