Vegetable Lentil Soup

Ingredients
  

  • 3-4 cloves garlic
  • 1 diced onion
  • 3-4 large carrots chopped
  • 3-4 large celery stalks chopped
  • 3-4 diced red potatoes
  • 1 small sweet potato diced
  • 1 can organic tomato paste 6 oz
  • 3 Tbsp. Italian seasoning Or substitute favorite curry or Thai seasoning
  • 1/2 Tbsp. pepper or less if you don’t like spice
  • 2 cans diced tomatoes do not drain
  • 1 box organic vegetable stock
  • 6 cups water
  • 4 cups lentils pre-soaked, if possible

Instructions
 

  • Sauté garlic, onion, carrots, and celery until softened.
  • Add diced tomatoes, vegetable stock, water, and lentils.
  • Bring to a boil, then simmer for as long as package directions suggest for the lentils, longer if potatoes need more time.
  • Adjust water to reach desired consistency.
