Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 1 medium potato diced
  • 1 teaspoon Italian seasoning
  • 1 cup green beans cut into 1-inch pieces
  • 1 can (14.5 oz) diced tomatoes undrained
  • 6 cups vegetable broth
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cups kale chopped
  • to taste salt
  • to taste pepper

Instructions
 

  • Heat olive oil in a large pot over medium-high heat. Add onion, garlic, carrots, and celery and sauté until tender, about 5 minutes. Add potatoes and Italian seasoning and cook for 2-3 minutes.
  • Add green beans, diced tomatoes, and vegetable broth. Bring to a simmer, cover, and cook for 10 minutes, stirring occasionally.
  • Stir in corn, peas, and kale. Cook until kale is wilted, about 2 minutes.
  • Season with salt and pepper to taste and serve warm.
