Vegetarian Nacho Soup

Ingredients
  

  • 1 TBS oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1/2 bell pepper red, yellow, or green are all fine
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 15 oz diced tomatoes I like fire-roasted
  • 15 oz vegetarian refried beans
  • 10 oz red enchilada sauce
  • 1 cup veggie broth or water
  • to taste salt and pepper

Instructions
 

  • In a large pot, heat oil over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  • Add garlic, chili powder, smoked paprika, and cayenne pepper and cook for 1 minute more.
  • Add diced tomatoes, refried beans, enchilada sauce, and veggie broth. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  • Season with salt and pepper to taste.
  • Serve hot with your favorite toppings.
