Instructions
Cook noodles according to package directions.
In a pot, combine non-dairy milk, water, moringa powder, curry paste, soy sauce, and ginger. Bring to a simmer.
Add bok choy and snap peas to the pot and cook until tender-crisp.
Add cooked noodles to the pot.
Garnish with chopped peanuts and cilantro. Add a squeeze of lime juice if desired.
