Warming Carrot and Courgette Soup

Ingredients
  

  • 500 g Carrots
  • 500 g Courgette
  • 1 tsp Cumin Seeds
  • 1 tsp Curry Powder
  • 100 ml White Wine
  • 1 l Vegetable Broth

Instructions
 

  • Chop the carrots and courgette into roughly equal sized pieces.
  • In a large pot, sauté the carrots and courgette with cumin seeds and curry powder.
  • Deglaze with white wine and let it evaporate slightly.
  • Add vegetable broth and bring to a boil. Reduce heat and simmer until vegetables are tender.
  • Blend the soup until smooth. Season to taste.
