Warming Veggieful Borscht

Ingredients
  

  • 2 tablespoons Olive Oil
  • 1 large Onion diced
  • 2 medium Carrots sliced
  • 2 medium Beets peeled and shredded
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 tablespoon Apple Cider Vinegar
  • 1 teaspoon Dill fresh or dried
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and carrots and cook until softened, about 5-7 minutes.
  • Add beets and cook for another 5 minutes.
  • Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until beets are tender.
  • Stir in apple cider vinegar and dill. Season with salt and pepper to taste.
  • Serve warm.
