Instructions
Heat olive oil in a large pot over medium heat. Add onion and carrots and cook until softened, about 5-7 minutes.
Add beets and cook for another 5 minutes.
Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until beets are tender.
Stir in apple cider vinegar and dill. Season with salt and pepper to taste.
Serve warm.
